REFRIGERATION - In the warmer weather, you should keep your cakes cold. If traveling for a long period of time, keep your cake in a cooler or use ice packs.
In colder weather, 40° or less, cakes with butter cream can travel much longer. If kept cold, approximately 1 to 2 hours. Take consideration on traveling time with mousse cakes and whip cream topped cakes which tend to be more delicate.
Some desserts will travel better than others, but keep in mind there are no preservatives or stabilizers in our pastry. Warmer temperatures will cause shorter shelf life and decreased quality of your dessert. |
